Oh, what a yummy salad this is. I made it yesterday for dinner and I wish I had made tripple the portion. As I try to do with most of my meals, I combined several different tastes and textures for a "party in my mouth" experience. Enjoy
6 meduim leaves of raw kale- stripped from the stemm and ripped into small pieces
10 brussel sprouts- chopped in food processor (or by hand if you prefer)
10 cherry tomatoes ( i used yellow for extra color)
1/4 cup dried cranberries
juice of 1/2 lemon
2 tbs of balasamic vinegar ( I used white baslamic vinegar, but regular will be just fine)
2 tbs of sesame seeds ( optional)
Lightly ( 1 min or so) steam kale and chopped brussel sprouts, or use raw for extra crunch.
Add mushed avocado, lemon juice and balsamic vinegar and massage the veggies with both hands- they will get tender and supet tasty.
Add cut up radishes, tomatoes and cranberries. Toss lightly and serve.
